Allergens

a&t food control laboratory ensures protection of human health through allergen analyses.

Allergens are those substances that cause the production of antibodies and allergic reactions in case they are eaten, inhaled or touched when the body's immune system recognizes the antigens.

The samples coming to our laboratory are controlled for food allergens by using PCR and ELISA kits which determine low levels of allergens.

Allergen analyses are required to be indicated in the labels as well.

Fish, soy, peanut allergens are checked at our laboratory using Realtime PCR methods.

All sample batches are subject to quality control measurements to guarantee the accuracy of the data. a&t displayed accomplished z-scores for the allergen analyses of various food samples during the competence tests it has participated in over the recent years.
