It covers hundreds of parameters that describe good ranging from the ratio of coloring and protective substances added to food on purpose to the analysis of pesticides, mycotoxins and metals. Modern instrumental techniques including HPLC, GC-MS, LC-MSMS are being utilized for the analyses of additives, residues and contaminants in food substances.
